detoxifying beet salad

  • Serves 2-4


  • 2 large beets
  • juice of 1/2 lemon
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp olive oil
  • 1 tbsp roasted sunflower seeds (to roast raw seeds, place in the oven on lined cookie sheet with either foil or parchment paper and roast on 350 for 8-10 minutes tossing halfway through)

Equipment Needed:

  • large opening grater 
  • mixing bowl
  • peeler
  • kitchen gloves (optional)


I suggest wearing kitchen gloves for this part, though the red die does wash off if you do so right away if you don't have gloves.

 Peel beets and grate on the largest grater option and add to a bowl. Add the rest of the ingredients aside from sunflower seeds and combine. Add to plate and top with sunflower seeds.
