Let's talk about this bubbly, delicious strawberry water kefir. If you're a soda drinker and reading this blog, I'm going to go out on a limb and say you might be trying to make a change to improve your gut health. Well, you're in luck; this probiotic drink is a delicious, healthy alternative to conventional options. But there is a commitment involved. Every 2-3 days, you have to switch the grains from their current water to a fresh batch of sugar water. Your grains will continue to grow and expand, and eventually you will have to split and add them to other containers or if you have any takers, give some away.
Sound intimidating? It's not. I was sure I was going to mess it up when I first tried it, but you'll see just how simple it is. In my opinion, the water kefir gets better after several batches once the grains really get used to the new environment. I've made this recipe many times with a variety of fruit and have settled on strawberries as holding up beautifully, fermenting well and though naturally losing their red color, they flavor the water perfectly.
Since I can't find grains locally, the next best thing is Amazon. I've ordered from this company several times and can't say enough about their quality and consistency.

What Is Water Kefir, Anyway?
Water kefir is a fermented beverage made using water kefir grains — small, translucent crystals that are actually a symbiotic culture of bacteria and yeast (SCAMP). Unlike milk kefir, which is dairy-based, water kefir is made with sugar water, making it naturally vegan and dairy-free.
The grains feed on the sugar during fermentation, producing a drink that's low in sugar, rich in probiotics, B vitamins, and organic acids. The result is tangy, mildly effervescent, and endlessly customizable — which brings us to strawberries.
Why Strawberries?
Strawberries are one of the best fruits to pair with water kefir. Their natural sweetness complements the slight tartness of the ferment, while their bright, jammy flavor comes through beautifully in the second fermentation (more on that below). They also contain vitamin C and antioxidants that survive the fermentation process reasonably well, adding a small nutritional bonus on top of the probiotic benefits.
Fresh, ripe strawberries at peak season are ideal — but frozen works just fine if you're making this off season.

Strawberry Water Kefir
Strawberry Water Kefir is a refreshing soda alternative that's full of probiotics, gut-friendly, refreshing, and tastes great!
Ingredients
- ¼ cup raw organic sugar
- 1 batch water kefir grains , it's typically about 3-5 tbsp
- 4 cups spring water , it's very important to use spring water, never tap
- 4 sliced strawberries
Instructions
1. Combine sugar and water in a wide-mouth bottle and stir with a wooden spoon until sugar dissolves. Add water kefir grains, cover with a coffee filter or cloth, and secure with a rubber band. Store at room temperature for 2-3 days.
2. Once water kefir has finished fermenting, strain the liquid in the bottle with stopper and reserve grains.
3. Add the strawberries to the freshly poured water kefir, secure the stopper, and let water kefir sit on the counter for 1-2 days until you start to see bubbles and the strawberries have lost their color. (You may not see a lot of bubbles until about the 2nd or 3rd batch).
4. Wash the wide mouth bottle and repeat the process.
