One of my favorite foods aside from avocado, is probably sweet potato. I make it more than I can tell you and I've tried to come up with ways to keep it creative. That doesn't always work but there are some recipes that just stand out. This one did it for me. The proof? My 4 year old son, grabbing them hot off the roasting sheet while I'm trying to plate food. Now, mind you, my son is a rather picky eater, which of course is devastating for me but I'm hopeful that it's only a phase. But I digress. I know what you're thinking: "Strawberries, mushrooms and chicken?" I realize it's a very unlikely combination but I recently heard a chef talk about some unusual ingredient pairings and that piqued my interest. There are several compounds chicken, strawberries and mushrooms share, which makes this trio work quite well together. I'm intrigued whenever there is a deviation from the norm. Something that defies the standard way of cooking. 

I set out to try a recipe which would either be a disaster or would completely surprise me. I was stunned and delighted at how beautifully the ingredients worked. This recipe is quite quick to do and won't disappoint. The longest part is just marinating the chicken. If you're really pressed for time, 15-20 minutes will do but ideally an hour is best.

Those of us who hear the word smoothie, generally think of bright colorful fruit and some sort of yogurt, milk, or maybe water. For some courageous types, maybe a little spinach may make it green. This smoothie is a bit different. It provides a jolt of energy that not even coffee can match. I find it's an amazing pick me up any time of the day. No caffeine of any kind, just all of nature's goodness. 

Parsley has been making its way into the main stream as being more than just plate decor. It has an incredible nutrient profile and I'm using it as a base for my smoothie along with cilantro.

Furthermore, it is one of the highest antioxidant plants, delivering an impressive amount of vitamin K, C and A. Several tablespoons of parsley can deliver over 500% of daily value of vitamin K, over 60% of vitamin C and close to 50% of vitamin A. It also delivers folate, iron and many other minerals and micro nutrients. Parsley has been widely used in traditional medicine for help with :

  • GI issues

  • Diabetes

  • Hypertension

  • Cardiac disease

  • Ear infections and many others.

super green parsley and cilantro smoothie

  • prep time: 5 mins

  • makes: 2 servings

Ingredients:

  • 1 handful of organic parsley

  • 1 handful of organic cilantro

  • 1/3 of organic English cucumber or 1 regular size cucumber

  • 1/2 tsp fresh ginger minced (I use a lemon zester to make it fine)

  • 1/4 tsp fresh turmeric (or 1/4 tsp dry)

  • 2 organic celery stalks

  • juice from 1/2 lemon

  • 2 cups water

  • optional: if you want some sweetness, add one chopped pear skin on


Equipment:

  • blender


Directions:

Blend all ingredients in a high speed blender and enjoy right away.
