When it's hot out and you're absolutely not in the mood for anything heavy, this light and refreshing salad is sure to solve that problem. It also pairs fantastically well with a chilled Rose, in case you're in the mood! 

Most of these ingredients I generally have on hand and throwing them together takes very little time. I don't eat raw spinach every day but a few times a week is perfectly okay. Raw spinach is high in oxalates, but you would have to eat quite a bit of it to have any concern about potential risk of kidney stones. So a few times a week is perfectly safe and especially if you're not at risk of kidney stones, go ahead and enjoy!

  • 2 cups organic baby spinach
  • 1/4 cup blueberries
  • 2 tbsp cubed mango
  • 3-4 strawberries, sliced
  • 1/2 avocado
  • walnuts


  • 2-3 tbsp extra virgin olive oil
  • pinch salt
  • freshly ground black pepper
  • 1/4 tsp honey
  • 1 tsp lemon juice


  • tongs
  • small mixing bowl
  • large bowl


In a small mixing bowl, combine all ingredients for the dressing and set aside. Next, you can either assemble all your salad ingredients directly on the plate and drizzle dressing over it or you can add them to a large bowl and combine with dressing first then plate it. Sprinkle with walnuts and enjoy!
